I can tell you exactly why the Daedra find the Dagoth Family

This is my own headcanon for the Daedra, so take it or leave it at will.
One of the functions Daedra serve, in that they are capable of both good and evil, is keeping the Balance. The Balance is hinted at by one of the dremora you encounter in Battlespire, who then adds that it's not for mortals to know.
It gets into a bit of stuff that Stephen King has written, so if you've read The Dark Tower series or Insomnia, it's a little easier. The whole idea of the Purpose and the Random, and how both are needed, but can easily get out of control. On a small scale, the Ordinators could be seen as agents of Purpose getting badly out of control.He touched on the idea of how some people, or even whole worlds can be tied to the Balance. Destroy one, and it creates a huge ripple effect.
In my headcanon, and it gets into trippy metaphysical crap here, Nirn is what I cann an anchor world. So is Earth, but that gets into stuff beyond the scope of this that will have people thinking I need to go to Passwall and see Mar, so we won't go there. Anyway, because Nirn is anchor world, it's vital to the Balance of existence itself. think of a string of beads, with no knots between them. Nirn is at the end, with a knot keeping it on the string. Untie or cut the knot and...
You get the picture.
The Dagoths have the potential to either directly affect the Balance, or cause other events to in turn affect it. So the Daedra keep an eye on them and make sure nothing too disruptive will happen.(It would have to be a big thing before they'd step in and send the Guardian with a direct warning. But we'll get into the Guardian another time. She's not what you'd expect and that in turn ties into other stuff that is also a story for another time, other I'll be here all day writing this and it will just be work, work, work all the time.)
